What The Science Says About Bulletproof Upgraded Coffee

Upgraded Coffee Beans are made using the latest techniques for detecting and avoiding mycotoxins.  Countless hours of research have gone into making the best coffee beans on planet earth.  Here are some studies in support of the principles used to create Bulletproof Coffee Beans.

  • 52-91.7% of green coffee beans are contaminated with mycotoxins.(1)  50% of brewed coffee beans are moldy.(2)

        Don’t store it in the fridge! Gah! I was a coffee snob who only drank washed process single origins before going bulletproof (and losing 38 pounds of body fat whilst gaining about 9 pounds of muscle without any exercise over about 10 weeks), the fridge kills good coffee! Seal it and put it in the cupboard!!!

          Of course, optimal flavour is between 7 and 11 days after roasting, so I only ever have about 125 grams of coffee lying around at any given time…

          Congratulations on your success!! For long term vacuum sealed storage with minimal degradation, freezing works. Just don’t open it until it returns to room temp to prevent condensation which will ruin the beans!

    I’m looking forward to trying the coffee, but I’m curious about other usual forms of caffeine and also very curious if anyone has any experience with Matcha Green Tea? I really enjoy it and feel that the energy I get from it is less spikey and sustained longer. But reading about mycotoxins has me wondering about the potential levels of mold in tea and in Matcha in particular.

      Find a place described as ‘Specialty Coffee’, look to see if they’re using either a La Marzocca or a Synesso machine, also look to see if they have several large glass beakers and a stainless steel kettle with a super-thin spout lying around. Ask them questions about coffee, and if they’re happy to spend all day telling you everything you thought you could know about coffee, ask if they serve washed process single origin coffees and then find out who roasts for them. Then ask the roaster if they roast clean coffee. The answer should be Yes (accompanied by an awesome long explanation of how coffee exists). Then buy your coffee from that place, but only get the washed stuff – some will sell natural process as well because it has an understated flavour.

    I’m very sensitive to caffeine so ordinarily don’t drink coffee, except for the occasional cup of decaf or sip of my boyfriend’s coffee. But I’m intrigued, as I’m a big fan of grass-fed butter and coconut oil. Is there any evidence that the caffeine is lower in this coffee or other ways it might not trigger headaches?

      Caffeine is not much lower in this coffee, but there is evidence that the less threatened coffee is by bugs and mold, the less caffeine it makes in self defense. It’s the lack of mold toxins and amines that makes Upgraded Coffee a different experience.

    Hey Dave,

    This coffee is really quite good! Have definitely become a fan. Very clean and the mct/butter recipe is quite tasty! The morning lift I get does feel much cleaner especially after the caffeine begins to let down. No foggy brain an hour later like I normally do with a bag of Starbucks.

    I have a quick question about storage. I just bought one of your five pound bags and since it’s just my wife and I that will be drinking it, it will probably last awhile. Do you have any recommendation on how to store the coffee so it will last? Is it better to put it in the refrigerator? Do I freeze a portion of it?

      Thank you Cory! It’s so cool to see how many people have shared their experience with Upgraded Coffee. The cognitive difference is real and very noticeable. ☺
      For storage, your best bet is to properly seal the beans (vacuum pack, jars, or ziplock, in that order from best to worst), then freeze them in 1 lb units.
      Then, when it’s time to use some beans, get out a bag and let it sit on the counter until it reaches room temperature. THEN open the seal and pour the beans into your storage container of choice for “ready to use” beans. This step is CRITICAL so that condensation from the air onto cold beans doesn’t happen.

        neophyte coffee drinker here – just got my shipment of 2 bags of your coffee. Also returned from Target with a vacuum sealer and coffee grinder. I’m ready to rock tomorrow morning.

        I’m unclear as to what you mean by Ready to Use Beans? So I store the beans under vacuum frozen but then I portion some out for the week? again my apologies I have never made coffee before from scratch and am really looking forward to using your product properly (and storing it!)

          Ok, keep 1 bag in cool dark place, like counter. Use beans from that. Seal & freeze other bag, and only open it after it has reached room temp to avoid condensation.

    Coffee makes me break out. As much as I’d love to be smart, I can’t handle the anxiety caused by bad skin.

      Two things come up here:

      1) Does ALL coffee give you bad skin? Or does bad coffee give you bad skin? Not every cup of coffee is the same. I gave up coffee for 5 years because it made me feel awful…until I figured out it wasn’t coffee. It was the stuff that grew on coffee. Try moderate dose high quality/low toxin coffee and you may find it even helps your skin.
      2) Anxiety issues…most people can handle anxiety caused by pimples. If you feel you can’t handle it, you have some work to do! You may also have adrenal stress. Try adding salt to your diet, especially in the morning, and see if your anxiety goes down.

      Got any references? Sounds like a “too much coffee” study – it’s very common for reporters to confuse the two. Most coffee contains mycotoxins, and one of the 3 major classes of mycotoxins is a group of potent xenoestrogens. Eating those will cause estrogen dominance. I am unaware of a pathway of caffeine metabolism that would cause estrogen dominance. Do any other readers have info about that?

    Does the roasting process affect the presence of mycotoxins ? Intuitively I’d think that most of them would be killed during roasting, but I haven’t been able to find anything one way or the other. Can anyone break it down for me?

      Mycotoxins are poisons that are not alive. They are heat resistant and some are lowered but none are destroyed by roasting.

    Ok, I was cheating and trying to do bulletproof coffee with organic coffee and it was ok, not good, but ok. Then I ordered the upgraded coffee and it was good. Much smoother and a whole lot less bitter (not bitter at all, really) than even another brand that I buy A LOT, that is fresh roasted daily. I broke down and bought a single serving blender and thought that it wouldn’t make much difference in how the coffee tasted. Boy was I wrong!!! I saw a comment about having an oil slick on top of the coffee and that she just didn’t like it. The oil slick really didn’t bother me, I just stirred before I took a sip. I even bought some organic, grass-fed cream and made my own butter because it was cheaper than Kerrygold. And it was fun!!! BUT, OH MY WORD!!!! The blender kind of makes the butter blend into the coffee and turns it into a latte!!!! So much better!!! It makes it creamy and it seems to sweeten a little. This stuff is great!!! Now I need to get some MCT oil and try it instead of the organic coconut oil I’ve been using!!

    Hello! Been drinking bulletproof coffee for about a week. Love it, but after 5 days or so, I started having really intense feelings after drinking my morning cup. Really bizarre. Felt very dissatisfied and irritable. Took a day off, felt normal, and now about to drink my first cup since feeling insane Any thoughts on what this might be? Beans are single origin, wet processed, and I’m using organic grass fed butter. I want to to keep drinking, but I don’t know if I can continue to feel CRAZY every day.

    Thoughts? Suggestions?

      Sounds to me like your beans aren’t that clean. Maybe they had insect damage, or the fermentation microbes were not so friendly.
      You can hit 80% reliability with the techniques on my site if you buy local random coffee. But for me 80% is not good enough, since I want to feel great all the time. That’s why I made Upgraded Coffee. It works all the time and it’s reliable. And it costs about $2-3 more per bag than the average bag of decent beans. Despite the extra $3, I sell it at a lower margin than most coffee because my costs of production are way higher. But it works! ☺

    I bought your coffee and mixed it with Kerrygold and MCT yesterday. My body’s response was not favorable. I felt jittery, anxious, and foggy all day. Terrible sleep last night. Same results again today. I’m IF – only eating between the hours of 2 pm and 8 pm. I’m in great health, and I eat a very clean diet – grass fed meat from one neighbor, pastured eggs from my own chickens, raw milk from another neighbor and mostly local, organic produce. I don’t drink alcohol, take any drugs, and I’ve never been a coffee drinker (just green tea). I used to eat a small amount grains, following Weston A Price foundation principles of soaking and sprouting.

    Stick this out or wave the flag and go back to tea? Or is it carb withdrawal?

      Wow, you’re the only person to report anything like this so far. Did you recently cut carbs/go low carb? Do you have adrenal exhaustion perhaps or some chronic autoimmune problem? And how much did you drink? Any sensitivity to butter or MCT by themselves? Are you getting enough salt?
      Suggestions if you decide to go forward:
      Brew it without a paper filter (ie French press or espresso) to get more cafestrol, which is anti-inflammatory. Does all coffee do this to you? Quite interested in helping you hack this!

        Nope, no adrenal exhaustion or chronic autoimmune problems. On the contrary – I’ve been fortunate to enjoy excellent health for 46 years. The last time I was sick was with a bout of gastroenteritis in 2003. No food allergies or sensitivities either (I’ve worked with a naturopath in the past and had testing done). I’ve been a nurse for almost 20 years and operate outside of the American mainstream by treating my family holistically. I live in Portland, OR and have access to wonderful “alternative” health care practitioners, should the need arise.

        I’m used to using coconut oil daily and only consume raw dairy. I have been brewing the coffee using a French press. Like I said, I’ve never been a coffee drinker, except for a few cups here and there 18 years ago when I used to work 12 hour night shifts. I’ve never really liked coffee because of its effects – the same effects I’m currently experiencing (poor sleep, even with only drinking it before noon; jitters and an overall feeling of anxiety and confusion).

        I have concurrently cut out my consumption of the small amount of properly-prepared grains I ate – homemade sourdough and soaked/sprouted grains. I’m going to give this a week and ride it out. If the symptoms are still occurring, then I’ll consider switching back to tea and increasing my carb intake.

        Thanks for writing me back. After searching your site, I couldn’t find anyone else who was experiencing what I outlined, which is why I posted. Strong amounts of caffeine may just not be my thing.

          Sounds like you’re living a really good life! Sourdough and fermented grains have high amounts of amines in them; sprouted ones do not, although mold is always an issue with sprouting as I’m sure you’ve experienced. You may be feeling weird if you’re used to having those in your diet and you cut them out; you may also be feeling the effects of “induction flu” which can happen when you go low carb for a few days. Could also be gluteomorphin (opiate receptor) withdraway. Waiting a week is a good idea, but I’d suggest actually doing just low carb/no grain for a week and then adding coffee to isolate variables.
          Some people have genes that make them bad caffeine metabolizers; they take a lot longer to break it down. You may be one of them. http://www.23andme.com can do that test for you!

          My whole family has strong reactions to caffeine. I used to get very jittery and sick feeling, but drank very weak coffee to start off and eventually built up a tolerance. You could try using less coffee grounds for a less strong cup and see how you feel.

    I just tried the coffee this morning and I am so impressed. I had my first taste of real coffee at age 41. The butter part seemed strange and I grimaced when I took my first sip, but was more than pleasantly surprised at how well the butter and the coffee went together.
    The coffee was so good that I can’t wait to have my second cup tomorrow.
    I will never have any other coffee again.

    I am not used to grinding beans to make coffee..what is the weight/amount of beans per cup to use and have a great cup of coffee?

    I used a Cuisinart hand blender in my coffee cup today and turned it on and it when all over the counter. I guess I need to do that in the French press before pouring it in the cup…duh!

    Dave, your response to Smart included an inquiry regarding adrenal exhaustion. Is your coffee/any coffee contraindicated for adrenal issues? Would appreciate more info on this. A long time ago I was told I had adrenal fatigue; not sure if I’ve healed that or not.

    Also, I avoided regular coffee for years due to candidiasis. Lately I’ve been drinking decaf because I couldn’t seem to tolerate the caffeine in regular coffee. I generally seem to have the candidiasis under control, and have been tolerating small amounts of caffeine in green tea and iced (black) tea, but get really jittery when I drink regular coffee. From your info, I’m now thinking I could still be reacting to the molds in both nonbulletproof regular and decaf coffees. Any thoughts about candida and coffee, and caffeine tolerance?

    I’m feeling really led to try out bulletproof coffee w/butter as part of my own upgrade process…I’ll be starting an intensive study program for the CPA exam soon and want the improved mental performance and energy (just turned 51; diet is about 85% primal).

      I have tried yerba mate, both in the US and in South America. Some people swear by it, but it doesn’t hold a candle to coffee in terms of benefits or noticeable impact.

    Recently received my 1 lb bag. It’s good, I’d give it a 7 or 8 on a scale 0-10. I used Whole Foods heavy cream instead of butter, and a dollop of MCT oil. By comparison, I’d give the local Starbucks coffee a 3 or 4. There is some personal preference bias here; I like a darker roast, so if the Bulletproof beans were a bit darker, I might give them a 9.

    I’m a bit of a coffee fanatic. I get my roasted coffee from a local small-scale roaster, Bean Traders of Durham, NC. I buy only single variety beans, not blends. Sometimes when I feel industrious I buy green beans from Sweet Maria and roast them myself.

    As far as the mycotoxins are concerned, I mostly don’t have any of the symptoms from the Bean Traders beans. I know the proprietor and he is a perfectionist. So I’ll be sticking to Bean Trader beans.

    A question: are the green beans available for roasting my own Bulletproof coffee?

Are you aware of any customs restrictions in Oz regarding your Collagen supplement & MCT oil?     I was wondering if Bullet Proof coffee is available at any of the local shops or stores anywhere in Victoria or surrounding communities. I’d love to try it but the shipping cost is too much for my current financial situation.

    I also wanted to thank you for turning me on to MCT oil. I can’t believe how much of a difference it makes in my energy and how I feel and I can’t wait to see how it works with high quality coffee.

    Also, I am allergic to dairy and I am hesitant to try the butter or even ghee in my coffee. Are there any alternatives you could recommend and how does the butter derived from the milk of other animals compare to grass-fed cow butter?

    I haven’t tried grass fed butter yet and react to the regular stuff and was surprised that the Market on Yates didn’t have any. I shouldn’t be too shocked though. The people behind their meat counter looked at me like an alien when I inquired about grass fed beef. Are there any sources or retailers of grass-fed meats in our area that you’d recommend?

        Sadly Market on Yates has the same butter everywhere else in BC – corn and soy fed dairy quota government butter. A sad health problem for Canada to be honest. They block imports of healthy grass fed butter (except personal imports of limited amounts), and they block internal production of it in the country thanks to large companies who own quotas on the dairy system. It needs fixing. ☹
        BP Coffee isn’t available locally…yet. Hoping to get some on the shelves at Habit. Give me a month or two!

      I am also allergic to dairy. My wife just ordered some grass-fed organic ghee which is rumored to not cause allergic reactions. I will give it a try… If you can find some raw dairy dairy farm that may work for you also. I always have a reaction to dairy, but last year we found a farm that sold raw dairy – legally they have to label it “for pet use only” – I was able to drink two gallons of whole raw milk that week and never showed any of the normal allergy symptoms that I usually get. I am going to see if they have raw butter soon.

        Most ghee is so low in casein that it doesn’t cause problems for people unless they’re super sensitive – like anaphylactic perhaps. I think 3 people have said they don’t tolerate ghee.

      You’re likely allergic to the ultra-pasteurized, homogenized and de-natured casein protein contained in most dairy, and would likely be fine with the grass fed butter. You might also be lactose intolerant, also not a problem with grass fed butter.

        No, unfortunately, I am full-blown allergic. To all all parts of dairy. (Can’t even do sheep’s or goat’s milk….). Have been using one TB of quality MCT and one TB of organic unrefined cold pressed coconut oil in my morning coffee.
        Should I bump up the MCT or the coconut? I know MCT is mostly coconut, but aren’t there different nutritional properties?

    If you *really* want your coffee to taste amazing, you’ve got to try cold brew. I do that with regular coffee from the grocery store and the taste is night and day. You can always heat it up when you drink it. Just google “cold brew coffee”, there are lots of ways to do it and you don’t even need special equipment. I pretty much don’t like hot-brewed coffee anymore unless I’m desperate for caffeine.

      Absolutely! I bought a Toddy Coffee maker 5 years ago, and it’s all I drink – except for the occasional espresso or pour-over.
      I’m surprised that I haven’t heard more about cold brew coffee in conjunction with Bulletproof Coffee…
      I posted on the forum and got zero intrest or comments from anybody there aside form a recommendation to pre-melt the butter…

      It’s on the list, but demand might not be that high, and pre-ground beans are not as good. Working on a way to solve that. In the meantime, you can buy a basket for your keurig that lets you use real coffee in it. ☺

    Dave your coffee is awesome tasting and I do feel less jittery on it. What is your view about consuming the beans raw, like nuts or seeds? I was on a three hour drive and brought some bulletproof coffee beans and started munching on some while driving. I got the same clean caffeine buzz but didn’t need to spend the time and effort grinding the beans and brewing the coffee (I know, I’m lazy). Is there anything in the coffee bean that needs to be cooked to be released, like lycopene in tomatoes? Or is the antioxidant quality of the coffee bean preserved to a higher degree from not cooking it; I know cooking other foods destroys the antioxidant quality. What’s your view, Dave? Thanks for the blog and the coffee.

      Funny, I eat Upgraded Coffee beans plain on occasion too. My kids love them – they each get one bean as a special treat at breakfast. You’d think they were peanuts or something! If you don’t get GI upset, it’s probably ok. They sell chocolate covered (probably higher toxin) coffee beans as candy – no reason you couldn’t do the same. I also sometimes toss a handful of beans into an icy smoothie with egg yolks and MCT oil; makes for a great crunchy coffee ice cream shake flavor.

    i am absolutely floored! i’ve never noticed ANY positive effects from drinking a cup of coffee. but i ordered a bag of upgraded coffe and brewed up my first cup a few minutes ago and i was very skeptical upon placing my order because i’ve had such lackluster effects from coffee previously but i barely made it through my first cup and i swear i felt like i was running suddenly on full power, it’s literally unbelievable. of course it had butter and MCT oil as all of my other cups of coffee usually have but basically i just wanted to say…if anybody’s on the fence about shelling out for the upgraded coffee, it’s absolutely worth it! it’s unbelievable!! cheers to you, dave!
